If there's one thing Thanksgiving is good for, it's the food! Spending time with friends and family too, of course, but let's be honest, eating is really the main attraction. The Thanksgiving meal is a pretty big deal and generally requires a lot of work to prep all those delicious sides and cook the perfect bird, but one thing that doesn't need to stress you out this year is dessert. Try any of these 5 ridiculously easy chocolate desserts so that you can actually have your cake and eat it too!

2. Brownie Batter Cheesecake
1 box brownie mix (dry), divided
3/4 cup flour
1/3 cup butter, melted
2 (8 oz) packages cream cheese, softened
1 1/2 cups heavy whipping cream
whipped cream and miniature chocolate chips for garnish
Mix together 3/4 cup dry brownie mix, flour, and melted butter in bowl. Pour into a springform pan. In separate bowl, beat cream cheese until smooth, then add remaining brownie mix and whipping cream. Spread over crust in springform pan and bake at 350F for 45-55 minutes, or until set in the center. Allow to cool completely in refrigerator and serve!
3. Banana Split Brownie Parfait (serves 12)
Fibre 1 Brownies
1 package cheesecake pudding mix
1 cup whole milk
1 cup whipped cream
2 cups frozen raspberries
2 bananas, sliced
1 cup chopped strawberries
1 cup chocolate fudge sauce
Cut brownies into small squares and set aside. In medium bowl, beat together pudding mix with milk and let stand until thickened. Fold in 1/2 of whipped cream. In each parfait glass, layer brownies, pudding mixture, raspberries, bananas, strawberries, and fudge sauce; repeat until full. Top each glass with whipped cream and raspberry. Freeze until firm and then let stand at room temperature before serving.
Freeze brownie pieces for 1 hour. Meanwhile, crush graham crackers and place in bowl. Then poke brownie bites with pop sticks. In separate bowl, melt marshmallow mix in microwave for 10 secs. Dip frozen brownie bites in marshmallow cream and roll in graham crumbs. Bet you can't eat just one.
5. Strawberry Fudge Brownie Sundae
1 Fibre 1 Chocolate Fudge Brownie
1 tbsp vanilla frozen yogurt, slightly softened
3 slices fresh strawberry
1/2 tsp light chocolate syrup
Rip open a brownie pouch and place in a serving bowl. Then spoon frozen yogurt on top, top with strawberry slices and drizzle with chocolate syrup. Bam!

Now on those hot sunny days, the last thing you want is be stuck in the kitchen. So here are 5 delicious summer recipes that are super easy to make, and have us eagerly looking forward to the return of our glorious summer!
Red and White Sangria Pops
3/4 cup red wine
1 1/4 cups orange juice
1 tbsp powdered sugar
1/4 cup white wine
1 cup white grape juice
1/4 cup peach nectar
24 small 3-oz cups
24 popsicle sticks
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced
2 kiwis, peeled and thinly sliced
1/2 cup red grapes
1/2 cup green grapes
1/2 cup strawberries, thinly sliced
Combine red sangria ingredients in one pitcher , and in another, combine white sangria ingredients. Stir and set aside. On a baking sheet, arrange cups and place a few pieces of fruits in each one. Then fill 1/2 the cups with red sangria, the other 1/2 with white sangria. Cover all cups with a sheet of plastic wrap, and poke a popsicle stick through into each cup. Freeze 4 hours, remove from freezer, peel off pops, and partay!
Raspberry Lemon Square
1 Fibre 1 Delights Lemon Bar
1 tsp raspberry preserves
1 tsp whipped topping
3 drops lemon juice
3 fresh raspberries as garnish
Smooth preserves on a plated Fibre 1 Lemon Bar, mix lemon juice and whipped topping, spread on top of bar and garnish with raspberries. Boom.
8 graham crackers
32 large marshmallows, cut in half
2 chocolate bars (such as Hershey's)
1 cup fresh strawberries
Break crackers in half to form squares and place on a baking sheet. Then arrange 4 marshmallow halves on top of each square, and broil/torch until golden brown. Break each chocolate bar into 12 pieces, place on top of crackers, and add raspberries. Sandwich the marshmallow-topped crackers onto the raspberry-and-chocolate-topped crackers, and stack as desired. Nom nom nom.
Salted Date Caramels
2 cups fresh dates, pitted
3/4 cup virgin coconut oil
1/4 cup cacao powder, sifted
1 tsp vanilla extract
2 tbsp virgin coconut oil, at room temperature
1/2 tsp sea salt
1/4 cup coconut flour
coarse pink sea salt, for sprinkling
Place dates in a medium bowl, cover with boiling water, and let stand for 10 minutes to soften. Meanwhile, melt coconut oil in a small saucepan, then combine with cacao powder until slightly thickened to make coating. Drain the dates and process with vanilla extract, extra coconut oil and salt until smooth. Transfer mixture to bowl and freeze 30 mins until firm.
With damp hands, roll date mixture into balls, followed by rolling in coconut flour. Then, using a fork, dip balls into cacao coating, place on parchment-lined tray, sprinkle with extra salt, freeze for additional 10 minutes until set. Share with friends, or don't!
Vodka Gummy Bears Pops
3 cups Sprite or ginger ale
1 bag wooden popsicle sticks
1 1/4 cup Vodka
1 1/4 cup Gummy bears
Place gummy bears in a bowl, cover with vodka, and soak for 24-72 hours (the longer the better obvs.) Then stir to separate, strain 1/3, and place gummy bears in the bottom of 10 popsicle molds. Pour Sprite to just cover, about 1/3 full, and freeze for 60-90 mins. Once first layer is frozen, add popsicle stick, second layer of gummies, soda, and freeze again. Repeat for third layer. 18+ only.
