Our taste buds got way too excited when news broke that Montreal's first Philly cheesesteak restaurant was opening, to the point we couldn't get cheesesteak off our minds. A classic and traditional PCS (an abbreviation I just made up) but that's hard to find outside of Philly, so we looked around the interwebs for a version we could make ourselves, and we found the Philly Cheesesteak Grilled Cheese.

Created by BS in the Kitchen, the crazy cooks behind the Poutine Grilled Cheese, the Philly Cheesesteak Grilled Cheese is essentially just a PCS in GC form. Or, in less acronym-tastic terminology, it includes shredded beef steak, fried onions and green peppers, with melted provolone tying all the ingredients together.

Much like the PCS itself, there's room to wiggle in this recipe. Use a different style of cheese (like Whiz, the PCS classic) or opt out the onions and peppers for sauteed mushrooms, another frequently used addition to a cheesesteak. All you need to do is make sure you have enough meat and cheese inside pan-fried toast and you're set.
