Raspberry & Rum Mojito Popsicles You Will Want To Eat On A Hot Summer Day

During my extensive scientific research into the field of delicious alcohol filled popsicle creations I came across mojito popsicles early on. However I didn't want to write about them because they only appear delicious on paper (paper makes everything more delicious) But can you imagine eating a popsicle then encountering an entire wad of mint leaves? Or how about when you get to that lime chunk. It looks cool and all but who wants to chew on a goddamn lime? But Mojitos are so delicious that I had to revisit the idea and that's when I was lucky enough to find these little treasures from WonkyWonderful.
These are the wonderful Raspberry Mojito Popsicles (hold the lime slices please) and they're a much better version of the original. Raspberries are delicious and as opposed to mint leaves, it's something you'd actually look forward to encountering mid-bite. Plus if you're feeling extra adventurous you can always let the raspberries soak up a bit of extra rum before tossing them into the molds.
Here's what you'll need to make 'em:
- 1/2 cup of vanilla yogurt
- 1/2 cup of rum cream or Baileys if you prefer.
- 1 lime's worth of juice
- fine chopped mint
Take your raspberries and soak them in white rum for 10 minutes. Mix the yogurt, rum cream, 2 spoons of sugar and the lime juice. add rum soaked raspberries and chopped mint directly in the mold and then pour in your rum yogurt mix. Freeze for a half hour, add your Popsicle sticks then freeze for another 4-5 hours.
