This one has been my go to for months and I hope you enjoy it as much as I do. Since tuna is really the star of the show in these bowls, you're gonna want to spend a little extra for the good stuff (sushi grade). STEPS: 1. Make sushi rice. Follow bag instructions. Mine is 1:1 ratio. Make sure to rinse your rice very well until the water is clear.(tip: I add a splash of rice vinegar to the water) 2. Cut tuna in 1/2 inch pieces. Marinate in rice vinegar, sesame oil, soy sauce, sriracha, sesame seeds, white part of green onion (save the green part for serving). Let marinate for 15 minutes. 3. Prep your toppings. Boil edamame seeds, dice cucumber, thinly slice jalapeño, avocado, chop cilantro, and chop green part of the green onion. 4. Plate: In a bowl, first add rice to the bottom. Then place your toppings around the rice going clockwise. Tuna, edamame seeds, jalapeño, cucumber, avocado. Top with green onion, cilantro, and more sesame seeds. Serve with extra soy sauce and spicy mayo. TADA!
