Lava cake is that wonderfully rich dessert you just can't seem to make properly at home. The timing has to be precise or else you just end up with a regular chocolate cupcake. But now there's a relatively easy to make alternative that can only described as a cross between a cookie, a cupcake and chocolate lava cake.
Introducing the Nutella Lava Cake Cookies. The good part is that this is the kind of cookie that tastes amazing even if you totally mess up the recipe. But if you nail them, it's be worth the effort.
Here's how to make them:
- 300ml of Nutella
- 110ml of butter
- 100ml of brown sugar
- 100ml of regular sugar
- 1 Egg
- 2 tsp vanilla
- 220ml flour
- 1/2 tsp salt
- 1/2 tsp Baking Soda
- Chocolate Chips
Take a baking sheet lined with parchment paper, drop 12 spoonfuls of Nutella and freeze them for 2 hours.
Melt the butter and whisk in the sugars, then add the egg and the vanilla and whisk again.
Slowly add the flour and baking soda and keep whisking until smooth. (add chocolate chips if needed and whisk once more)
Take a greased cupcake baking tray and place a spoonful of the cookie dough at the bottom of each cup.
Place your frozen Nutella nuggets on top and cover them up with another spoonful of cookie dough.
Bake at 350ºC for 15-20 minutes.
