Jerk is a style of cooking native to Jamaica that relies upon two main ingredients to pack all that punch: allspice (called “pimento” in Jamaica) and Scotch bonnet peppers.
Normally meat - usually chicken and sometimes beef - is dry-rubbed or wet marinated with this very hot mixture of allspice, scotch bonnet peppers, and some combination of the following: cloves, cinnamon, scallions, nutmeg, thyme, garlic, brown sugar, and ginger. Yuuum.
And that my friends, is why jerk chicken tastes so good. Always succulent, moist, and just the right amount of spicy with undertones of sweet surprising you at every bite. Just all around incredible flavor, you could only find in the West Indies.
That said, Montreal is hosting it's very own Jerk Fest this summer in Park De La Savanne on Sunday, June 24th. This is a great local event to check out and will really offer you that true Montreal community vibe.
