I don't know what's up with the internet lately but it seems there's a conspiracy out there to turn me into a fat alcoholic. I keep coming across these amazing booze filled Popsicle recipes and they're all so amazing I've even started inventing my own ways of adding more alcohol to the Popsicle without preventing from freezing over.
The secret is to infuse fruit pieces with alcohol and freeze those inside the Popsicle to get little booze soaked fruit bombs.
So far we've already brought you:
- Kiwi & Mango Lemonade Popsicles
- Long-Island Peach Iced Tea Popsicles
- Lemonade & Fresh Fruit Popsicles
- Cucumber Gin & Tonic Popsicles
And now I proudly present Coconut Mango White-Rum Pops:
For these you'll need: 2/3 cup of white rum, a can of coconut milk (13.5 oz), 3 tbsp sugar and a large mango.
Pour the rum in a bowl and throw in cut pieces of mango to let them soak up. In separate bowl, pour in the coconut milk. Take the mango infused rum and mix it in with the coconut milk, add the sugar and blend everything together. Once you're done, throw in your mango pieces and stir again. Pour it all in a Popsicle mold or Dixie cups and go take a nap.
