Lovers of vegan food, rejoice! A new vegan sushi restaurant is opening this August in the Old Port. The restaurant's ethos is to produce high-quality, fresh and tasty sushi that won't harm our oceans.

This new restaurant, dubbed Bloom, is the result of a collaboration between the founders of LOV and Sushi Momo, two vegan restaurant powerhouses in the city.

Ashley Tisdale recently called LOV "the best vegan restaurant ever." And Sushi Momo is well-known throughout the city for its delicious vegan sushi. 

I spoke to Dominic Bujold, the founder of LOV and co-founder of Bloom, to learn more about this dream team.

Bujold said that he spent a long time looking for the best plant-based sushi during his travels, but ended up "falling in love" with Sushi Momo, which has the best vegan sushi he's ever tried.

The two went into business creating a new kind of vegan sushi restaurant: one with a smaller, more refined menu that is gastronomical without being "too expensive."

The menu, which Bujold said will change seasonally, will feature mostly sushi as well as a selection of other rolls and seasonal dishes. It wants to prove that vegan sushi is about more than just avocados and cucumbers.

There will also be a selection of organic sakes and Japanese-inspired cocktails made with Kombucha.

The restaurant's owners want to be as environmentally friendly as possible: aside from using only plant-based ingredients, many menu items will be organic, and the restaurant is trying to do away with as much plastic as possible, including ditching plastic water bottles.

The decorator is the same person who created LOV's signature décor, so you already know that it's going to be Instagrammable AF.

The restaurant is a fusion between the casual izakaya and the more traditional Japanese restaurant: on one side of the restaurant, there will be a small, casual bar, with ten seats for patrons.

On the other side, 40 people will fit into a small, welcoming space. You'll have to reserve to sit in the intimate restaurant section.

The restaurant is set to open in late August, though an official opening date has not yet been set.
