Time Out Market Montreal Is Getting A New Brasserie Serving Up Classic Comfort Foods
Montreal's Time Out Market is welcoming a new brasserie to its repertoire of impressive eat and drink counters and the menu is loaded with mouthwatering comfort foods including truffle mac and cheese and duck confit burritos.
Climats, the new brasserie, will be spearheaded by Chef Jean-Sébastien Giguère, the soul behind La Cabana du Coureur, Restaurant H3 and Le Coureur des Bois, to name a few.
Climats doors at Time Out Market will officially open on Thursday, February 8 — where guests can enjoy delicious local cuisine with a twist.
"Climats is my vision of a Québecois brasserie," Giguère explains. "There will be a certain modernity to the menu without compromising warmth and accessibility, always using as many local Québec products as possible.”
Starting next month at Time Out Market, Giguère's full range of culinary creations will be available to enjoy including a decadent three-cheese mac and cheese topped with a truffle crumble, crispy halloumi tacos, a duck confit burrito topped with maple cucumber and creamed corn, halibut fish and chips and much more.

In a press release shared with MTL Blog, Giguère explained that in every restaurant he's worked, "the atmosphere somewhat dictated the menu. It’s my way of keeping my team and myself motivated."
When it comes to the freshness of his ingredients, Chef Giguère does not play around. "I know the fishermen who caught the northern shrimp and halibut that’s on my menu, along with the exact farm the duck and vegetables came from," says the chef.
