Every year, anticipation builds for Canada's Best New Restaurants list. It's a benchmark of culinary excellence across the nation, scrutinized by a panel of critics, chefs, and diners. In 2024, new Montreal restaurants got more than one seat at the table.

Based on innovation, consistency, and quality, three Montreal restaurants made an impressive showing, cracking the top 10. Sabayon grabbed the fifth spot, while Casavant earned the sixth place, and Parapluie landed at number nine.

Landing on the list can lead to increased interest from foodies and a surge in business, marking each establishment as a must-visit for the coming year.

As these restaurants bask in their well-earned recognition, here's what you need to know about the winners:

Where: 2194, rue Centre

Reason to go: Sabayon features a six-course tasting menu that changes seasonally ($125 per person). The menu focuses primarily on vegetables, fish, and seafood, occasionally incorporating meat. The intimate setting accommodates only 14 guests per night, ensuring a personalized dining experience. In addition to dinner, Sabayon also hosts cooking classes and an afternoon tea service ($55/each).

Where: 350, rue de Castelnau Est

Reason to go: This new Mile End brasserie is open seven days a week, serving everything from oysters (six for $18) to gourmet cheeseburgers ($22) to Arctic Char with fennel ($23). Whether you're in the mood for a comforting plate of coq au vin or something a bit more adventurous like seared scallops with a citrus-infused foam, Casavant caters to both classic and contemporary tastes.

Where: 44, rue Beaubien Ouest

Reason to go: Open from Wednesday to Saturday, this spot in Little Italy has an evolving menu, perfect for those who enjoy a surprise with every visit. You can enjoy dishes like oysters with mignonette from New Brunswick ($18), and lobster mayo egg ($15.50). For the main course, the scallops with by cauliflowers and bagna cauda sauce ($31) is a standout.
