While we can't skip ahead in time to experience summer or international travel just yet, the feeling one gets from digging into the halo-halo from Montreal's Cuisine de Manille comes pretty close. 

If you're not familiar with halo-halo, it's a Filipino dessert made from a base of shaved ice blended with evaporated milk.

Then there's usually a bunch of other delicious and complementary ingredients mixed in like chewy red beans, gelatin, toasted rice, coconut, fruits, jam, caramel flan and a dollop of ube (purple yam) ice cream.  

The halo-halo from Cuisine De Manille on Avenue Victoria is topped with fruits and their homemade ube ice cream.

Halo-halo means "mix-mix" in Tagalog, so the idea is to stir, as Atlas Obscura puts it, "until the rainbow of ingredients comes together in a delicious hodgepodge parfait."
